Fruits and Veggies


I sent Sister out the door with one of these this morning.
 I enjoyed one myself!
Then I had my morning coffee....
because I hate to mess with my morning routine.  :)

I thought I would make a healthy snack,
 so I mixed up a batch of salsa.
It needs some adjustments...
because it is so spicy I could only eat one bite!


Just trying to find new ways to enjoy our Fruits and Veggies!

I was thinking you might like this recipe!
It's a hit wherever you go, and a fun way to mix it up a bit.
Watermelon Salad: 
(one half watermelon) chopped into small pieces, 
1 sweet onion, sliced into thin rings or slices. 
1/4 cup red wine vinegar
1/2 cup light olive oil
salt and pepper 
2 TBSP fresh mint, chopped finely
4 oz feta cheese, crumbled. 
Toss all together in a bowl. (It's best if you chill overnight, but you can eat it right away too.) If you chill it overnight, you may need to pour off some of the juice, or just use a slotted spoon when serving. Enjoy!

That smoothie looks yummy. Did you slip some spinach in there? ;)

On the salsa --- when using peppers take out most of the seeds, that is what makes it hot.
